I Don't Know How To Make Healthy Meals!
Hello everyone, around this time last year, I think I was on lesson 5. Actually, I didn't even start the program yet, LOL. Anyway, I'm back on this lesson because this is my biggest problem, OVER EATING and junk food. I was doing excellent, and for the most part, still am, but I've been stressed lately with buying our first home, I started to eat junk again, sugar, fast food, you name it. Then I noticed I was getting anxiety again, so I'm here again. I want to eat healthy, I just don't know how. When I was doing grrrrreat, I was eating plain boring things, like chicken breast with vegetables and brown rice. Thinking about eating that now, makes my mouth dry! I don't want to eat boring like that again, but I know I should. Does anyone know of any recipes or ideas on healthy cooking? To be honest, I don't know how to cook, lol. I only know how to make fried stuff and things that aren't so healthy. Even if you can recommend a good healthy cook book, that would be greatly appreciated.
I'm stuck where you are, wishing someone would make healthy meals for me so I don't have to think about it. I've been eating a lot of different soups for lunch and having my oatmeal in the morning. Dinner time, I just try and eat small portions, so even at fast food times, I eat a kid's meal. So far, it's working. If I'm craving a sweet, I have one cookie, not five. I know if I cut out the yummy stuff all together, I will fail. Good luck.

Well I'm not on that session yet but have been cooking for almost 40 years. I don't exactly have recipes I follow as it's all things I have either taught myself or was stuff my friends Father made. He was an awesome cook, as were both my parents. I believe your going to find so many yummy recipes on the internet and the best part they are free. I recently did some online checking myself. Healthy eating doesn't mean boring or drab. It actually can be some of the best food you will or have ever eaten. The worst stuff comes from already processed foods. You really need to read the labels as to what bad things they slipped into that can of soup or jar of pasta sauce. Ingredients are always listed with the highest amounts first. Usually it's the sugars, or fillers so be carefull. Using olive oil, skim or 1% milk, fresh fruits and veggies, lean meats, red potatoes, flax or whole grain noodles, breads, home made sauces for pasta, cabbage rolls, stuffed peppers, fish and chips so long as the fats are non trans fats and don't eat a ton of fries or deep fry this. I bake it on foil. What you want to eat are good carbs and good fats and no white rice, white breads, white flour, and so on. These are what add on weight, cause fod cravings and hunger. If you look for recipes for healthy heart or that diabetics follow you won't go wrong. These are higher in protein, use health carbs, and good oils and fats. Make it fun, have a friend over and make a meal together. I sure get tired of cooking and really can get bored with the same old meals so I try to spice it up while still eating healthy. I have lost so much weight eating things i like but altered some ingredients and have no food cravings, feel better, sleep better and don't crave the junk i used to devour. My husband tells me i'm the best cook and baker in the world. LOL So just look, shop, read, cook away. In no time you will stop craving all the bad yummy foods.
I will try to figure out how much and what all I put into some of my meals if you let me know what you like to eat.

I watch the food network alot. they also have a great web-site with free recipes. I have one of Rachael Ray's cookbooks and also Paula Deen. I just love her. She's from Georgia too

Something I do is really put alot of Flavor on my food. Try dried spices and fresh...they really do make a difference. Something I started doing is putting fresh fruit on the table at supper time. that way after we (husband&kids) eat our main meal we have something sweet already on the table. I Prep it ahead with everything else so there are no excuses...on the time it takes to peel an orange or peaches,etc.
Also a good way to get veggies in your diet is putting them in like..spaghetti sauce(onion,bell peppers,mushrooms) what ever you like. It taste so much fresher and good for you plus it feels you up more. Also try whole wheat pastas...they feel you up faster too.

ATTITUDE -- The mind is like a parachute...it doesn't work unless it's open!!
I eat sugar when anxious to avoid discomfort. I was doing well before the program, but I slipped a bit when I began. I do well on regular meals and I am improving. Healthy doesn't mean boring even though it can seem that way. If you are bored you will eat naughty. My advice is to find recipes online or in magazines and then shop from those recipes. Realize that if it comes in a box or can it has preservatives that it wouldn't contain normally. When you prepare things yourself at least you know what it is. Unlike some things like yellow #4. What is that anyway? No one really knows. I like knowing what is in my body. Read labels it's interesting. You need to give yourself a reason to eat healthy. Right now it seems pointless. Try to observe how you feel after eating healthy and after eating badly. It's eye opening. Well hope that helps. I'm not perfect either and saying no to sugar is hard, but I'm trying.

I have followed a food intolerance diet twice and I try to keep to a healthy diet based on avoiding additives and artificial ingredients, processed foods and sweeteners.
The first thing you probably need to realize, is that food can be addictive. You may have an addiction to the food you are eating, while at the same time not tolerate it well. That is going to make everything else seem boring until you have gone through a 'detox' period.
My rule for eating is that the food should be basic - meaning non-processed. I eat fish, light meats (chicken, turkey, lamb, some red meat), vegetables, fruit and some root fruits like potatoes. Sometimes I eat chocolate or ice cream - I try to get organic/all natural.
One of my favorite dishes is baked salmon - it's easy and delicious:
SALMON
Turn the oven on to 325F or turn on the grill (this is awesome on the grill!). Line a pan with tin foil - use two lengths side by side overlapping if you have a whole side of salmon. Put the salmon in there skin down. Salt and pepper the fish. Place onion pieces or rings on the fish, and some chunks of real butter. Cover the fish with dillweed (fresh or dried). Close the foil so it forms a tent over the fish. Put the pan in the oven or the foil pack right on the grill. Cook/bake for 25 minutes - the fish is supposed to just turn firm and flake.
This is also easy to make in individual servings if only one person wants fish for dinner. Cooking time is more or less the same.
Serve with sour cream, a salad and homemade or organic/all natural dressing.
LAMBURGERS
Ask in the meat department of a good grocery store if you can get ground lamb. Lamb has usually not been fed the hormones or medications that are in beef, and it is quite healthy red meat. I prefer US lamb, the Aussie/NZ lamb has a very strong taste.
Make your own lambburgers - just stir in an egg into the ground meat and form patties, fry in oil in a pan or on the grill. Serve with a salad and maybe fried, spiced potatoes (no spice mixes, blend your own).
BAKED POTATO
This is great when you are really craving something sinful... Bake a potato in the microwave for 10-12 minutes and serve with sour cream, real butter, shredded cheese, salt and pepper, green onions, bacon bits, or whatever topping you prefer (but stay away from spice mixes or chemical ingredients) and a salad.
HOMEMADE EASY SPAGHETTI
Brown ground meat (organic/all natural beef or lamb) in oil. Add fresh chopped tomatoes or organic canned. Add crushed garlic, chopped onions, salt and pepper, 2-3 bay leaves, oregano and basil. Let stew in a deep frying pan for 15 minutes or so.
Boil whole grain spaghetti or spelt spaghetti if you are sensitive to wheat.
