I'll be asleep, maybe for only 30 minutes, and I suddenly wake up ( it feels like I jump out of bed) and my heart is pounding and racing so fast, it feels like a panic attack. What could cause this during sleeping?

That's just a panic attack. They can just pop up on you. I use to get those a long time ago. It use to make me not want to go to sleep.

I got through it though. You will too. :)
