What is the difference between I will do my best and perfectionism. To me they are the same. I don't know how to tell them apart.
Does anyone know what I mean?

Doing your best is doing the best you can, whether you did great or not so good, it was your best. But perfectionism is when you don't stop at your best, it has to be perfect at all costs, no matter what, no matter how long it takes or how much stress it causes you or someone else. It HAS to be PERFECT!

Perfectionism is a level one can never reach and may cause a lot of anxiety for some.

Doing your best is knowing that you gave it your all and tried the hardest you could. You could have done exceptionally well on something and you were in perfect health, or you could have done just "okay" in something because you were sick, but you tried as much as you could in your current condition.
