Moroccan Delight (taken from Richard Simmons Food Mover cookbook)
1 box (10oz.) Near East Cous cous
1 can (14.5 oz) Stewed tomatoes drained
1 Tbl of lemon juice
2 Tbl of chopped parsley
2 Tbl chopped garlic
3 cups of fresh baby spinach leaves chopped
Directions
prepare couscous as directed on box, omit butter or oil. Add lemon , parsley and garlic.
Wash and dry spinach and drained tomatoes,toss in(lightly steam in microwave or leave fresh if you want to serve it cold rather than hot)
