Yummy Sweet Black Beans

I know, this doesn't sound very appetizing (especially if you're not a fan of beans) but everytime I make this my husband (who has "hated" beans all his life) raves about how good they are... so give it a try!

Take 2 cups dry black beans & soak overnight. Rinse and then, boil 1 hour.
Add 2 chopped onions, 1/4 cup olive oil & 2 bay leaves (if available)
Cook for 4 hours in crock pot on low
Add 1 tbsp. sugar, 1 tbsp. vinegar & 2 tsp. salt (or spices).
Serve over cooked brown rice (can add diced meat)

Here's another one... I haven't tried it yet, so if anyone makes it, let us know how you liked it!

Carrot Pudding
4 large carrots, cooked & grated
1 small onion, grated
1/2 tsp salt (or spices)
1/4 tsp. nutmeg
1 tbsp. sugar
1 cup milk
3 eggs, beaten
Mix all together & pour into oiled crock pot
Cook on high for 3-4 hours. Enjoy.
