If you're not eating due to anxiety/stress, that's probably why you're feeling weak and shaky; it explains why you feel a lot better after you've eaten. Lack of food/sugar/glucose in our bodies leads to symptoms of light-headedness, nausea/vomiting, and the weakness and tremors/shakiness you mention...

Hey everyone, The part I'm having trouble with is recording what I've eaten. It's caused me to constantly count calories again.
